Name's Willie. Been cooking over wood for as long as I can remember. Worn out a couple of Weber bullets and a few horizontal smokers. Food just don't taste good unless it's been cooked with wood. I currently have a Backwoods Smoker Patio (they don't even make them anymore - the ole boy that makes them was just getting started when I got mine) and a 18.5 WSM. Just picked up a 47" Dyna-Glo Vertical Offset yesterday. Haven't even got it out of the back of my Jeep yet. It starts going together this weekend (look for a mod thread).

Found this place on a Google search and have browsed around a bit. Seems like a nice place and I look forward to jumping in to the conversation when I can contribute. I've seen some great recipes posted. You guys and ladies do all right. Wish you were my neighbors!

Thanks All

Willie, welcome to SMF!  Glad you are here and bringing all those years of smoking experience with you.  New folks always have questions about equipment, techniques, and meat choices.  You'll fit right in offering experience.

Have fun!

Noticed the wings in your avatar. Navy Aviator? Ex-AF (70-79) here, A-1E, B-52G/Hs.

Did you ever run across a Col. Vogler? He was SAC and at one time wing commander at Offut.
Spent all my time in BUFFs in the tropical paradise of K.I. Sawyer in Gwinn, MI, the UP. Where the summers reached a scorching 65 degrees and the winters a mild -65 of refreshing winter air. Where snow was measured by the pound and not the inch.

Yep, 77-87, A-7Es were my feet wet airframe.   Flew off the Kitty Hawk and Enterprise.

Corsairs, Spads, and BUFFS, we are bomber brothers from different mothers!
Amen!

Flew a 52 mission off the Azores when the Enterprise was in the area around 77. DAMN that's a big boat! I could see that thing 10NM away and it looked huge. We were out messing around with the Kiev.

Made me chuckle.  I flew off and on her deck in 82-84.  I was hoping someone would turn it into a museum now that it decommissioned (or soon will be) but it looks like it is going to be transformed into a few trillion razor blades instead.

Real shame when they kick an old warrior like that to the curb. It is what it is though.

One other thing, I'm jealous. I wanted to fly an A-7 more than anything else in the world. I fought like a dog to get an A-7 slot. When I did my Squadron commander dicked me and I lost the slot. That's why I left the AF. I'll never forgive him for doing that.

Welcome from SC, Willie. It's great to have all of your experience here to tap. That is if you and Ray can quit flying all over the world fighting wars and stuff. All them razor blades would sure be put to better use as smokers.

Good luck Willie and keep on smokin', Joe

Good evening and welcome to the forum, from a not to hot day in East Texas, and the best site on the web. Lots of great people with tons of information on just about  everything.
