I've had this two rib prime rib in the freezer for a while now. I was originally going to cut into thick steaks and reverse sear em...However, since I've never smoked a whole prime rib before and it was my eldest sons 5th birthday I decided to do it.  I didn't try anything to tricky for my first...

Here's the little fella getting ready for some seasoning


Rubbed with some A1 steak sauce, sprinkled with SPOG and wrapped ready for the fridge.


Sorry I didn't get many photo's  of the actual smoke....(running late)...24 hours later I tied it and fired up the MES30 with Mesquite...set up the iGrill and went for it.

I pulled it at IT 120F, foiled, towelled and into the cooler while I went about JimmyJ's Au Jus and baked some potato and butternut.


And the money shot......I couldn't be happier when I sliced into it.


Sorry again for not getting a plated shot...

The PR was super moist and tender...nice smokey flavor to it and the Au Jus...There's even some left for sammies this week. I'm very happy with this result. I'm not sure if I could do it any better. Just hope I can replicate it in the future.

Thanks....I can see that...My rest was probably longer than most....it was just over an hour. I left the probe in but not connected (had other stuff in the smoker) so I dont know how far it carried. WIfe an I like it rare to  medium/rare..Mother in Law cant stand to see any pink.

Yummo! Exactly how you have it is my fave way to have prime rib. I like the end piece with all the crust and the middle piece as rare as it can be with out being raw.

Happy birthday to your kiddo time sure files! My oldest son is gonna be 20 in 2 weeks!! He still lets mommy hug him which makes mommy happy
