My Take on the Tri-Tip

It's taken me 3 weeks to finally find a tri-tip, so after reading around I came up with my plan to smoke it.

I took many parts of different posts to come up with this.

My Tri-Tip Recipe:

Added 1/3 bottle of Dales Steak Seasoning to a foodsaver bag, added my 2.8lb Tri-Tip, and vacuum sealed. I let it sit for about 6 hours. (Came home at lunch to do it then went back to work)

After work, I set her up in a pan, drained the Dales, and added my rub that I also concocted.

I had my smoker ready to go at 230° and threw her in using Hickory Chips.

After 1-1.5 hours, I checked and saw an internal of 120-125° and took her out. I don't have a grill due to my apartment policy (they think my smoker is a mini-fridge [emoji]128527[/emoji] :devil:) so I used my cast iron pan and seared it for a few minutes:

Then I used the following slicing diagram that I stole from somewhere on this site after letting it sit for 20minutes:

The verdict:

First time and would easily do it again. For $23 this will feed me for a few days, not a bad price especially for what I'm getting. Flavor wise, it was phenomenal. I like my meat med-rare, emphases on the rare. No issues getting it right!

So this is what I did with some leftover TT and ABT:

Raw peppers, sautéed, then cut up some TT and flash seared it to heat it up (was still medium rare) - was phenomenal.

Next week I shall be smoking a turkey!
