Nothing fancy just a kit summer sausage mix. Safeway had 93/7 ground beef on sale so I grabbed 5 pounds and mixed it up.

Stuffed using my LEMon squeezer into muslin sausage socks I sewed up using the wife's sewing machine. So far so good the seams appear to be holding!
In the smoker for one hour at 120, no smoke. Then I'll add smoke (cherry) and up the temp to 140 and then 10 degrees every hour until I get to 180. I'll pull the sausage at an it of 156.

Looking good there DS I just started my smoker also, with all the smoke in the air here I am wondering if I need to add any chips or pellets LOL

Same here! It's pretty thick this morning. Wind kept it away yesterday.

What ya smoking?
 
Morning Dirt... I notice your muslin bags are soaking in water or something... That's the first I've seen or heard of doing that..

Is that something you came up with or ??? ... It does make sense to me.... just curious.....

It just seemed like the right thing to do. I washed them with vinegar yesterday and dried them. Just plain water this morning.

Unfortunately the smoke from the forest fires is overpowering the cherry smoke coming out of the smoker. When you open the door, it's tasty!
yep here too,,, I have to go out and position my self so I have a good background of the chim, just to see if I have smoke coming out from the ampts 

DS What time did you put in the smoker?? I put mine in at 8 and smoker temp now is 150 getting ready to bump to 160 have not probed mine yet

6am! I was up and moving early! Wife is coming home today so I need to get this project wrapped up!!!!!
