Nothing fancy just a kit summer sausage mix. Safeway had 93/7 ground beef on sale so I grabbed 5 pounds and mixed it up.
Stuffed using my LEMon squeezer into muslin sausage socks I sewed up using the wife's sewing machine. So far so good the seams appear to be holding!
In the smoker for one hour at 120, no smoke. Then I'll add smoke (cherry) and up the temp to 140 and then 10 degrees every hour until I get to 180. I'll pull the sausage at an it of 156.
