Thursday Wings (MES30)

After how good the wings were a few weeks ago, I wanted to do them again. The rub is some of the MM chicken rub we had left from the last wing cook, which we really liked. This time I'm going to try three sauces at the end- Myron's Chicken Sauce (which required me to cook a couple of sauces, combine in a blender & cook once more), our favorite homemade sauce (which we call Zip sauce) & Myron's Hog Glaze (apple-flavored), which I had left over from ribs last Thursday. I think they'll all be good, but I wanted to have choices & sauces don't usually go to waste around here. The wood will be about 2/3 hickory & the other 1/3 cherry. You may notice the small quantity of wings in these pics, as it was just going to be the wife & I originally, but after I already had my wings brined, the wife called & said she was bringing a couple of guests over. That required a trip down to the store & another couple of packs of wings, so I'm doing one batch right behind the other. These pics are the first batch. Got the smoker going, the first batch in & the Chicken Sauce is on the stove. Going 275 degrees (my smoker's max) & I plan on crisping the skin & caramelizing the sauce under the broiler after they are done, like last time out.

Got the rub going for a couple of hours this morning-


Brined them for another 2 hours-


Fired up the smoker (we had 30 mph winds, hence the chimney)-

They turned out pretty good, at least the first batch. The second batch is in the smoker. I had one of each, as the wife & company aren't here yet. I have to say, our homemade sauce is probably in third place. The two MM sauces are excellent! Now our sauce is usually it's best on beef & pork, but we've had it (& liked it) on chicken before, but the other two are definitely worth the extra work. We knew the Hog Glaze was good, as we had it last week on ribs, but the Chicken Sauce is JUST as good, but totally different. I know the wife will insist I keep the ever-present jar of ours in the fridge (at least for beef & some pork), but I'm happy to have found a couple of others I really enjoy especially after literally making a couple dozen different ones. Of course these are just MY findings & in another hour or so we'll see what three other folks think.

It WAS pretty windy here today, that must be what happened. Sorry. 

Just took the beans I also had going in there out & switched the racks around for the last batch of wings. They probably need another 30-40 minutes, though.

Mmmm! Chicken wings!! I'm hoping to do some this weekend but also found some spares for $1.99# I'll just have to figure out the best way to do both!

It turned out nice. The second batch was even better, as I left them under the broiler a tad longer. After several people tried all of them, the "judging" was actually unanimous! We ALL thought the MM Chicken Sauce was the best, followed closely by the Hog Glaze & finally, the Zip Sauce (which had always been the favorite "homemade" around here). What I can't decide (at least not yet), is whether the Chicken Sauce is better than the BBG Championship Red I made the last time we did wings. I may have to do a head-to-head in the future!

The beans were also a hit. I've tried several bean recipes (including several I got here). I've been slowing down on having to tinker with it, so I know I'm getting close.

Second batch- the top 4 on the left, as well as the bottom 3 on the left, are the Hog Glaze. The rest of the top row are the Chicken Sauce & the rest of the bottom row are the Zip Sauce.

Well ,I'll be looking for a big ole bag of them today !

My predicament is,, even though I love my Smoked Wings I also enjkoy fried wings in a nice breading and done to a golden , crusty , crunchy good ness and toss them in a good sauce and just enjoy "Bar food Wings" . l usually do them in my makeshift fryer ,But this time i think I'll pull my trusty Turkey fryer and do tbem there , need the practice on it for thr Wife . Shee wants to invite her family and have a fried finger food meal , with all the sauces and dips needed for those little morsels . :biggrin:

If Iwin the argument , I'll be posting my Bar Wings .:yahoo::

OSB- Fried is MY favorite. I have a couple of good breading recipes, too. Fry'em up, toss'em in some nice sauce & eat the hell out of'em! For me, doing in  the smoker, saucing'em & then crisping is a close second, though. Thanks for the compliment, buddy.
