So I rubbed and refrigerated (2) 7lb butts Friday night with the idea of starting them on my MES30 at midnight for eating on Sat afternoon. We lost power so was unable to smoke em. We have power back now and I have em on ice and want to put them on at about 8pm to be ready but 12 noon ish or so on Sunday.

Questions is...

Is 2 days too long to keep wrapped in plastic wrap marinating with the the rub?
 
 
As long as you keep them cold two days is not too long in my opinion.

Never forget the store/oven can save a great smoke if you had lost power after starting the smoke. If you get a few hours of good smoke the oven is as good or better than the pit.

Oh and I might consider re-rubbing them before smoking. You can't get too much of a good rub IMHO That bark is the cooks share .....LOL

Ok. As long as 2 days in wrap and rub is ok then I'm good. It's been on ice so they've been cold. Re rub night be a good ootion...yes, the bark is mine. Lol.
 
Well this sucks. Put the meat on at 10pm and lit the AMNPS and went to bed. Let it burn 10 mins then blew out flame. Opened the top vent all the way and pulled out chip loader half way. Went to bed and up at 8am. IT at 162. But the AMNPS quit burning looks like less than an hour into the cook. I just relit it and hoping it stays lit for the last couple hours. Will my cook/smoke be ruined with no smoke all night?
 
No you are not ruined. You will just have a lighter smoke flavor. Looks good so far!!

As for sitting with the rub for 2 days, you are good. I don't see any issue with that. I would do the same as said and apply a bit more rub just before going into the smoker.

Just from looking at your picture. I would make a tent to go over your AMNPS, you may have gotten some drippage and killed your burn path. I use one on both the AMNPS and AMNTS. Don't run into issues of it going out nearly as much.

OK great, thanks jarjar and Gary. I relit it at 8am and it's been smoking strong since. 1050am now and IT @ 183. Thanks for the tip...I'll tent for my next cook.
 
Great looking smoke IMHO...... You can lay on too much smoke but other than that, its really hard to mess one up. Looking at yours, I am pretty sure its a winner.

Believe me I am wanting a bun after looking at that picture!

Great smoke. Now are you going to repeat it all next time to get another great result??

Thanks for all the kind words and for the tips again. Yes Rdknb, the bark was great. No foiling for me until it rests. Took the pork out at 192 IT. Grab a bun and come on by, hehe...seems butts are fairly forgiving Foamheart. Haha...as far as repeating, well I had my notes from my first PP. Not even close to being the same end result. I used boneless butts that I got from Costco for this smoke. Plus different flavor pellets. This one I might wanna get closer to repeating. Thanks Gary...it was better than I expected and I was very happy....as were the other 9 people.

Yea, I only did one other butt smoke before this and didn't foil but I love the bark so much has that I won't foil other than the rest. No problem with being moist and tender at all. No injection either.
