as many of you know we started making smoked sausage  not long ago and we always make big batches and give to friends

but now they are wanting to buy it  ( this was never the intention )  but at the same time the quantity's are starting to get cost prohibitive  

but we will still give it to em as long as we can afford to ..   its hell being popular lol
 
I do a holiday gift basket and that is it for the freebie give away of smoked goods from our homestead. Many years ago it got way out of hand and wasn't fun anymore. Now I have a few friends that bring meat we make sausages or jerky or whatever, we split the end product. I supply the smoke and the spices. Works out good.
 
well we don't like snack sticks or cheese , so that shouldn't be a problem....but I do believe the word is getting out about our sausage ...lol

good idea,  however I am 3/4 blind , have had 4 major back surgeries , and have arteritis in my left shoulder

I kinda have to do things on my own timetable so I don't think a business is in my future ....

When I was still working as a butcher, I spent about 10 years processing venison and making sausage.  I worked 6 days a week as it was but those ten years a lot of hours was spent in addition to my regular job.  Those 10 years cured me from selling sausage as a business after I retired.   However the love of making sausage didn't go away.  Went to much smaller batches and like many of you just make sausage for friends and family.  I also have folks asking me to make sausage and get paid for it.  The guy's up north that want their venison made into sausage I do make a exception for.  They bring me the venison trim in 10 pounds packs frozen, so I'ts easier to process each different batch.  I do charge the guy's a price per pound, but it's less that they would anywhere around. Not doing it to make money, but the extra little cash i do make, rewards me maybe with a case of good beer and spices and supplies for future batches.  But I give away most of what I make.  I just like doing it.  Especially trying different types of sausage.  Reinahrd
 
we make smoked sausage abut once a month now , but  I have to admit we have a fair amount of money tied up in equipment

 we didn't think we were going to end up spending so much money, but if your going to do something might as well do it right ..lol
