I just finished seasoning my new MES Gen1. I bought a ET-732 and ran the probe through the top, clipped it on the second shelf down toward the smoker door.

My smoker display had only gotten to 272 after 2 hours with my ET-732 measuring 291-293. At the 45 minute mark left in the seasoning I added the apple chips. Smoker display stated 286 at its highest with my ET-732 showing 295.

Just curious if this seems normal? With smoke a 9 degree difference sounds ok to me since I will be smoking low most times anyway.

Sorry I didn't see this until now, but I'd say yours is working about as good as they get.

I'd be very happy with those temps.

I believe those temps will even get closer as it settles down during a smoke.

Note: Trust your Maverick, but give it a boil test anytime you want to double check it.

Temps will vary between the two and seem to settle down closer as the smoke gets going good.  Stick with the Mav reading.
