Looking for a little advice.  I'm doing about a 17 pound brisket this weekend.  Normally I just put my rub on it and smoke it till done.  I was thinking about doing a sprizt or a mopping sauce this time around.  I did find a recipe for a beer mopping sauce that sounds good.  Will doing either one affect the bark?  I don't wrap it, but going to do that this time after it's cooked for the rest time.  If anyone does do it can you recommend a recipe?

Thanks and a happy fourth to everyone.

Ed

Mop every 2 hours for 3/4 of the estimated cook time then let the Bark set. Here is a recipe you may like...JJ

Brisket Multi-Mop

Change it up!

2 C Low Sodium Beef Broth

1C Red Wine, Beer, Coffee or Cola

2T Worcestershire Sauce or more to taste

1T Brown Sugar, omit if using Cola

2 tsp Granulated Garlic

2 tsp Granulated Onion

2 tsp Fine Grind Black Pepper

1 tsp Celery Salt

1 tsp Cayenne Pepper or Red Pepper Flake. Add more if you like Heat.

1/2 tsp Grnd Allspice

Combine all and whisk well. This is a thin sauce, bring just to a simmer and remove from heat. Makes about 3 Cups.

Thanks very much for the reply CJ.  I have it saved.  Not sure how I want to do it yet, still looking for more information.  The recipe looks great.  I'll post up some pictures this weekend.

Thanks

Will be trying this out on my next brisky. Thanks!
