I boil pretty hard, I've done some in the past low and slow took a long time, I really can't tell any difference in the taste.

All depends on if the peanuts are green or dried.. Green hard boil 3 hrs  and check. Dried  i usually do small batch in pressure cooker.

They are fresh Thanks for the reply

As Gary said, two to three hours for green peanuts, then let soak until desired taste is achieved. Last ones I did soaked for four hours in the same seasoning I use for crawfish.

I only  used a salt brine, have them simmering now after 2 hr boil.

next time you start to boil some, do a batch using your favorite crab boil. You will never use plain salt brine again. It adds a tremendous amount of flavor to peanuts.
Kind of picked up on that and added some Old Bay while in simmer mood

I've been using the dried ones to boil, and have been boiling them hard for 3 hrs then I turn off the heat and let them soak for 3-4 hrs tasting the whole  time.

They aren't mushy that way.

I use salt and old bay to season them with and if I have any crab boil some of that goes in too.

I never thought I would like boiled peanuts but they are good !
