Im not a pineapple fan but the wife is. The extra loin is on the smoker as well. Ill update after we indulge in it lol.
 
It was awesome. A little spicy with the peppered bacon and cajun marinade but good. Next time id go with regular bacon and a different marinade.

How long did you cook and at what temp? We're you happy with the thickness of the pineapple?
About 240 degrees. 4 hrs. Pineapple was excellent and i normally always pass on pineapple. Just gotta be careful not to split the pineapple when coring it out.
 
Bacon was overcooked unfortunatly but it happens.
 
this site is ridiculous!!! I have soo many things found here to add to the arsenal of delicious goodness!!  My new Lang 36 wont be gettin too much rest after it arrives..  2 1/2 weeks left to wait.
 
I've read in some other swine-apple posts that the pork turned out mushy. I understand that the enzyme in pineapple can do that to meat. Did you experience mushy pork after your cook with this one?
