I also moved to DFW almost 2 years ago. Search this site and you will find tons of recipes and ideas for your boston but and ribs.
Keep in mind that depending on the size the boston butt may/will need to smoke for a bit longer than the ribs.
For the butt, I recommend rubbing it the night before, get your smoker running at 225 with your favorite wood and smoke until it reaches 160-170. You can wrap it in foil at that point and bring it the rest of the way up. I recommend letting it sit for at least 30 minutes before pulling.
For the ribs, if you like them fall off the bone (FOTB) you will want to do a 2-2-1 or even a 3-2-1 (2-2-1 equals 2 hours unwrapped in the smoker, follwed by 2 hours wrapped in the smoker, followed by 1 hour unwrapped in the smoker. If you like a bit of a pull, don't wrap them at all, you may want to make a SOP (a spray of apple cider vinegar and some beer) and mist them through-out the smoke, just don't spray them to much, as you don't want to knock off the rub. You can also add some sauce for the last hour.
There are tons of ways to do both. Try as many as you can, you will develop your own preferences.
