BOY is this warm, great with a Ice cold one. Well now since I got my freezer filled with that beef I thought I better use some of it.
Went to the smoke cabinet to see what I could find and BINGO!!!!
PS Seasoning Habanero Snack stick seasoning enough for 12 1/2lbs
went to the designated smoke fridge and BINGO Lava Jack cheese.
Now were smoking!!!
Pack included the right amount of Cure
Lava Jack Cheese I got from Butcher Packer I believe
It originally came in a 5lb bag so I put 1 - 11/4lbs and re vac packed it.
This was 10lbs of 80/20 ground beef and had to go to store and buy 2 1/2lbs of ground pork I hate it when they put it in 12oz packages
2 cups NFDM
Let the stuffing begin!!!! these are 2.4X12" long fiborus casings they hold about a pound each
Well summer is here and can't find any of my kids now to help but I am sure they will be around for snack time. So I convinced Mrs DS to come out and help,,, And wouldn't you know if she liked doing it??????
Had a little stubby one to finish it off
Not much left in the stuffer!!
And Done stuffing will go in fridge till tomorrow and smoked then.
OK FAST FORWARD TO SUNDAY TO THE SMOKER THEY GO!!!!
Smoker temp 120 for 2hrs no smoke
after 2hrs add smoke and bump smoker temp to 130*
Next hr bump up smoker 10* till smoker temp gets to 170
Smoke till IT gets to 152*
Then I cold bath my S/S
This took about 10hrs to get to 152 but well worth it. No fat out.
Into the Designated smoker fridge for an overnight stay
and the money shots
- These came out great!!
BINGO!!!!
and they are warm!!!!
That was a lot of work so I had to have a beverage!! or two or three
