Hi everyone!



Got $53.00 worth of wild Chinook for $25.00. Couldn't pass up the deal. Right place, right time.



Getting ready for the brine. This is least pink color of salmon I think I've ever bought.









Into the brine for an overnight flavor infusion! Using Cmayna's 4 to 1 ratio (brown sugar to salt.








Brined finished and ready for the 2 hour dry. I put the dry brine over it last night and fell asleep. I didn't touch the fish until this morning so I have some real inconsistent brined areas. Some super hard while other more soft as well as inconsistent color. I'm sure it will still taste good though.





All finished up an ready to let sit. Turned out good.

Craig, I've cedar planked salmon many times. That's probably my second favorite way to prepare it next to smoking. If you have some cool ideas, send them my way!

Glad it turned out great ! Oh yea, I know Rigby well... I live in Saint Anthony & pass thru Rigby on Hwy 20 on my way to work ! And I've worked the Rigby area for years with my job !
