We've been having a week full of thunder storms, rain, wind, you know perfect conditions for smoking a turkey breast in the mini. I picked up a bone one breast a while back on sale and put it in the freezer for a rainy day. Well June 1st became that rainy day! May 31st was going to be the day but a break in the weather allowed us some canoe time.

No smoking photos was raining to hard to take the camera outside. Simple set up. Mini-WSM, KBB, Kiawe, 350 pit temp. Rubbed the bird with salt, pepper, garlic.

Wife made a cauliflower mash. One head of steamed cauliflower, salt pepper, tofu (I know don't ask don't tell), Tillamook Extra Sharp White cheddar, bread crumbs from my Hemped up Bread I made. Baked in the oven for 30 mins.

Made mashed taters too and pan gravy from the drippings I caught. I placed the bird on a rack on a 9x9 foil pan.

Kind of a monochromatic plate but it sure tasted great!

Even with the mention of tofu, the plate pics still made my stomach growl. (I don't think tofu grows here in Georgia

Thanks! Yeah my ex-vegetarian wife tries to sneak tofu and fake veggie sausages into our cooks every once and a while. I put up with it so I can smoke more often!
