Beans in a UDS???

Diffuser or no? Just thinking indirect heat may work better. Yes or no?
 
Beans are best done indirectly. That said if you can keep your put temps low (under 250) you could go without a diffuser.

Check out Dutche's wicked beans, they are tasty.

250 is about the lowest our drum will hold. Have the ball valve about half closed. Have tried closing it just a fraction more and it goes out. Last time we did beans in it they had started to boil and bubble...Ended up being very tasty but a bit to watery for my liking. I have Dutches recipe saved to my computer, will be trying them sooner or later. For now it is just a couple cans of Bushes beans, this time will be Maple. 3/4 of a pound of bacon, 3 jalapeños, a serrano, a helping of all the different chili powders as well as some smoked black pepper and sea salt. Last batch was pretty tasty. Course the night I made them and ribs is when the stomach bug settled in so I didn't get to enjoy the leftovers. Ernie mashed the beans up, added some smoked cheese and had some mighty fine looking/smelling refried beans...
