When you get that beef out of the freezer.... I bought a pretty good pickling spice on AMZ. PM me if you want the brand.  Good flavor but I added a tad more red pepper flakes. You probably mix your own though...

Nice , Brian . It's about time for me to do a Pastrami .

I like to give them a good smoke  then place them in enough drippings (grease and all ) , go half way up on the meat . Simmer for 15 to 20in and get  the meat

soaked in that deliciousness . Slice the dripping meat  as thin as you can get it  slicer. Pile high on a Chibata Bun which was dipped in the mat juice .

Some good Mustard and a cold Beer . The life of Riley . . .

Cheers guys. There's been a slight postponement on this as I have taken family on holiday during half term.
I dropped the beef in the freezer and will defrost Sunday ready for brining.
I'll keep you all informed znd may even be making g a YouTube video of the process.
 
Hi guys, I have taken the beef out of the freezer, bit so I don't hijack this thread, Ill start a new one when I begin to brine it :)
