This is the first butt of the Spring season. Used a homemade rub, sat wrapped in the frig over night. Woke up at 3:30am and had everything prepped (including a light).

By 4:15am it went on, I went back to bed. By 1:20pm - it reached 205°F, pulled and wrapped.

Thought it would be done around 3:00ish for 4:00ish dinner. No worries - she's wrapped and we'll wait until pulling time.

Here's the pics I have so far, once guests and dinner starts, not certain if more pics will be taken.







 
Scooter-man, that looks amazing. You didn't lose your touch it all over the winter. I will be patiently waiting for a plate view on this. Good job so far.

That looks awesome! Using a PLC to control temps makes for a worry free smoke doesn't it?
It does - still need to baby the fuel from time to time.

It's still wrapped up, made up some finishing sauce. Fresh corn, pasta salad, broccoli salad. The serving time is real soon.

LOL......hard to beat those ECB's that most of us have had at one time or another. That looks exactly like my first one....minus the electronics. The turkeys I made in that are still talked about...good job, I'm sure success is close at hand......Willie
 
Thanks Everyone - here's some final pics after pulling. I always hand pull the pork.

As always, never get pics of the complete dinner spread. All was gone except two / three sandwich worth of BBQ.

Chef Willie - thanks for that. I've thought about get a 18" WSM but why? What I have works and I know it's behavior. 




 
Nice looking pork! As far as a WSM keep a eye on Craig's list and see if you can get a steal of a deal.
