Hello all, new to the forum here, but not so new to smoking. I have been grilling and smoking for quite a few years and even successfully did some competition BBQ. I know a pretty good bit about BBQ (I have the waist size to prove it) but as I feel, will never know it all. I look forward to sharing what I know with everyone and also learning from each of you!!!  Smoke on!!

We're glad to have you here. The search bar at the top is your most valuable resource here. This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
Please be sure to post your smokes along with your process and recipes. We will be glad to help you along the way and we may also learn something new ourselves in the process. Also, don't forget the very important Q view! (We're mad for pics on here [emoji]128513[/emoji])

What do you like to cook, what type of smoker do you have, what type if fuel do you use? Anything that will give us a starting point to who you are, smoking wise. Good luck, Joe

I mainly smoke pork, but have been venturing out trying new things lately. I have a Weber Performer that I use a lot, and a week ago became the owner is a new pellet smoker from Green Mountian Grills. That has turned into a fiasco since it didn't work correctly coming out of the box and having to deal with a tech support group who clearly doesn't have customer service on their mind.... Anyway, as a group (the 4 others who I used to do comp with) we own a 16ft trailer complete with SS work prep areas, sink w/ hot water and cabinets. We still do the occasional BBQ comp together and a couple of them do a lot of catering in the side. I lost interest in the comp and catering part due to getting burnt out and going to Iraq for work. Just wasn't interested anymore for the most part. I also got back into deer hunting with my son getting old enough to hunt and had to pick. I am in the Charleston area. As far as smoking fuel, I mainly use Kingsford Charcoal and add wood chips. Mostly hickory, but blend and mix chips to try different flavors. I am also getting into pellets, but as mentioned above, have had my pellet smoker for a little over a week and am still waiting on parts so I can attempt my first successful smoke on it.
