So I decided to pig out (ouch) on pork .Baby back ribs , spareribs and stuffed loin. I

 left the flap on the spareribs for the entire smoke ,it was delicious! Rubbed and ready.


Cooked up with a money shot.


Heres the ingredients for the stuffed loin-peppers, jalapenos, garlic, onion ,mushrooms and cheese


I used a 5# hunk of loin and did my usually lousy butterfly job.


sautéed and added the goodies to the loin


All rubbed up for a 3.5 hr smoke with apple pellets in the AMNPS at 225*-cooking to 145* or a bit higher.


Heres the finished product, I'm going to grow a snout eating all this pork !

That is the definition of wishful thinking. You just wish NH (in this case) meant North Hawaii, because that pork looks like it would be well worth the 40-minute drive for a sample. Now you've got me doing it, "I wonder if it means North Herndon?", a small community on the Ogeechee River about 10 miles north of me. It's really just Herndon, but the bridge is being rebuilt so you have to distinguish north from south so people will know which side of the bridge you're talking about.
