i have trouble gettin the pellets to stay lit over a hour or so, but fired up a tray this morning and 12 hours later it is still truckin.  i guess there is a learning curve. my smoker is just inside my garage and the wind was pretty stout today. that may have had something to do with it. any suggestions would be appreciated. one other question. when i ordered the trays i got two bags of pellets with them that are marked pitmaster. anyone got a idea what these are made of?? i generally use hickory on everything i smoke down here in sippi...

Pitmaster is hickory,maple and cherry.

I use alot of it.

Just make sure you keep your pellets dry and get them going good.

What is your altitude?

c farmer, have no idea. i do know this i am in mississippi about 10 miles south of memphis if that will help.  just checked it again and that bad boy is still pumpin smoke.  now i am wondering if i may get to much smoke. i generally do a boston butt from 8-12 hours or so. will i get to much smoke on it or should i pull the tray off at a certain hour mark???

I've read that the tube works better inside the MES. I have only tried it once so far, but it ran for 5-6 hours, no problem. You don't need to smoke the whole time.

I know this has been an ongoing topic but I recently purchased the pellet maze and a bag of cookin' pellets brand pellets. I microwaved them for 2 minutes, I have my chip tray out and my loader tube all the way out and still have issues with the pellets staying lit. I don't get it. What good is it if you can't hold heat in your smoker ??? Im trying to smoke at 275° but cant get above 250 because of the air flow for the pellets.I'm not happy with the product.

Do you have the 30 or the 40?

My tube stays lit, with no problems, I've read the tube works better in the MES, but tons of people get the 5x8 working.  I didn't try cooking at 275, but if the MS says 250, it might be at 280.  Did you confirm the temps with a probe?

I have the MES 30. I live in northeast PA so as far as elevation ??? I use the maverick digital that everyone talks about. My MES says 270ish but my maverick reads 250°

What is the weather like? Wind? Can you make a wind break? I have had to do that in bad weather with my old MES, even in CA. Some people use fiberglass blankets, but that worries me a bit. Fiberglass is almost as bad as asbestos. Before it was lost, I used to use the box it came in.

I can try some kind of wind break. My problem is the MES tops out at 275° and it won't get up to that with the loader tray out etc. Is it true when you use the AMNPS you shouldn't use a water pan ???

Last time I ran at 275, after taking it out of storage and cleaning it, it hit over 300,

It is true, most say no waterpan.. Keep it in place but don't add water. My tube ran well with water, however.

You may want to contact the owner of A-maze-n. He is supposedly very friendly and helpful.
