Gorgeous day here in San Diego.  78F, sunny, slight ocean breeze and the ol Smokin-It #2!!

Decided on some BB ribs for dinner tonight.  Got 2 racks and rubbed them up with my take on a Memphis Rub

1/2C Paprika

1/2C Brown Sugar

1/4C Garlic Powder

1/4C Dark Chili Powder

3 Tbs Salt

2 Tbs Black Pepper

1 Tbs White Pepper

2 Tbs Onion Powder

2 Tbs Celery Seed

1 Tbs Oregano

1 Tbs Thyme

1 Tbs Cumin

2 tsp Dried Mustad

2 tsp Corriander

1 tsp cloves

Rubbed them up last night and wrapped with plastic wrap and into the fridge. 


Here they are just out of the Fridge!!!


Unwrapped and naked....waiting to hit the Smoker


Into the SI #2.  Set at 225F with a mix of Almond and Cherry wood.   No mopping.....no foiling.....no peeking (well maybe just one pic later).  Plan on saucing lightly with Sweet Baby Ray's the last 30 minutes.

Going to make my perfect cole slaw (go to sides for the recipe) and serve with some spicy beans as well.

Those look marvelous so far , Padron . I've got 2 racks of Spares to do and will thaw Sunday .

Your Paradise is very inviting , wish I were on some coastline , Palms , waves crashing and Gulls screaming.

I'm on the sideline waiting for your finish shots.  Oh, and good choice on the Naked cook , just keep your smoke clean. . .
