I'm trying my hand at jerky tonight for the first time.  The recipe is simple enough:

- 2 lbs sirloin round.  I had the butcher cut it into 1/4" strips which saved me a lot of hassle.

- 1 cup strong coffee.  I used a short Pikes Place Roast from Starbucks.

- 1 cup Coke

- 1/2 cup soy sauce

- 1/4 cup worcestershire sauce

- 2 tablespoons hot sauce

- 1 tablespoon Tender Quick

It's been marinating overnight.  Plan is to throw it on the Traeger this afternoon for 4 - 5 hours on smoke.  I'm hoping for the best!

Any thoughts on what kind of wood pellets I should use for the best flavor?  I have hickory, apple, pecan, and oak at my disposal.  I'm thinking the hickory would probably give it the best smoky flavor.
 
PMM, Hickory would be good. Watch your smoke times as it is better to under smoke and smoke more next time then to over smoke and ruin your batch .

I smoked some ground jerky last night and did it on smoke for 4 hours then bumped to 180 (smoke was between 130 & 150 depending on my p setting) has some real good smoke taste and barely tell it's teriyaki.
Did it as a flat sheet as I don't know where my jerky gun disappeared and the rolling pin got it fairly thin between wax paper. I put in fridge overnight and cut with butcher scissors into strip.

I didn't take any pics of the finished product but I can do that tonight.  It came out real good and the batch (around a pound of jerky when finished) is about half gone already.  My 9-year old daughter has been eating it like candy!  Ended up taking only 3-1/2 hours on the Traeger smoke setting.

I didn't know you could make ground jerky too.  I'll have to give that a try!  My daughter loves jerky and it's a great school snack for her.  Economically, a 4-ounce bag of jerky is $6 at Trader Joe's so that makes $24/lb.  I spent $15 on meat plus a can of coke and a cup of Starbucks coffee, so I saved a few bucks making my own.  It's pretty effortless to make and definitely worth it.
 
I love making jerky I usually cut the round in a slicer 3/16 wide marinate then dry it off with paper towels then on the smoker 150 I shoot for but I don't watch it close I just let it go flip them over 2 hrs in then look for color and eat some if I like it I take it off I use hickory mostly on jerky I keep it extra clean cause it will be quick to over smoke ..... That's just my two cents lol
