Hi there. I am a chef working at a family run smokehouse in England. We serve brisket, pulled pork and ribs which are all smoked in a cookshack fast eddy pellet smoker. Just looking for general tips.
 
Hello and Welcome to our addiction.  Many good folks here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Seriously, I've never seen a fast Eddie but I would love to see it on action! Hopefully you can post some pics of your smoked goodies soon...

Do you own a restaurant that you smoke for or do sell generally to the trade? There are some lovely American style BBQ restaurants that have been popping up recently.

I cook and sell in a smokehouse/ restaurant to the public.
 
Do you want to give it a plug here as It would be great to visit if we are in the area. Good commercial smoked food is hard to come by in the UK
