I happened on this forum when I was looking for suggestions for the best cuts for jerky.  I don't have a smoker, just dehydrators.  It's hard to find time to sit at the computer & go through so many posts, so I'm here only sporadically.  So much info at this forum!
 
Tri tip, flank steak, London broil, top and bottom round. Any really lean cut will work for beef. Turkey and chicken breast (I like to pound flat). If your into pork, pork loin would work.
