Beef Loin Roast

Smoking a Beef Loin Roast I got from Costco for $5.99/lb.

Cut into steaks, it's called New York Strip

I smothered it in Tatonka Dust  and into my pellet grill for about 3.5 hours at 225°

Tube Smoker filler with Pitmasters Choice Pellets

I'll pull at 135° internal(Med. Rare) and let rest for 45 min.

Slice into 1" thick slabs

If my kid wants med. well or well done, I'll finish on the grill for a few minutes

Other than him, we all like it a  little on the rare side

If you haven't tried Tatonka Dust yet, you need to get yourself some!!

I just did my first New York Strip Roast a couple weeks ago, and it was Outstanding, and the leftovers were even better!!

I'll be Back!

Almost Done.......

3 hours @ 225° and it just shy of 115°

Bumped it up to 275° and will pull at 135° internal

 
Finished, rested for 40 minutes and sliced 1" thick

Perfect medium rare


Plated with some roasted cauliflower and a little salad

Doc no more carbs, but I can eat meat

Well, she did say only 4 oz. of meat per day, but.......

Doc says no beer, no potatoes, no bread, no sugar....No Carbs Period!

4 oz. of meat and the rest is green veggies

They approved me for a new study that focuses on carbs and how they effect cholesterol levels.  The study pays for my drugs, and it saves me $400/mo.  For that kind of money, I'll do what they tell me!!

After being on this stupid diet for 2 weeks, I can barely eat more than 4 oz. of meat anyway, and I'm full.

I know what you mean about a stomach shrinking. When I lost 41 pounds in those 28 days in the Hospital, I had trouble eating a slice of toast !!
