Smoking Corn Beef???

HI All I have a 3.5 corn beef, I'd like to smoke..Can I just smoke it like a brisket?

So far all my (12) briskets have come out on the dry side. I tired all the methods for smoking brisket, with the same results, tasty tender but on the dry side.

So how should I smoke the corn beef???

Dan if you smoke it soak it in fresh water to take some of the salt out, you can add a rub and make it into a Pastrami.I do that with mine.
 
Hi Can I just smoke like a brisket? Pastrami sounds good. just don't want to mess IT up. Will search for a pastrami rub.

        Rub Mix
4  Tbs Coarse Black Pepper

2  Tbs  Ground Corriander 

1  Tbs   Paprika 
 Mix these 3 together (you can add garlic ,onion , brown sugar). I like the plain 3

Mustard base on the meat smoke to IT 195 should be good.
 
I just picked up a corned beef flat that I'll be doing the same thing with.

I will soak mine for 1 hour changing the water at the half way mark.

I'm use a similar run as mentioned above except I add crushed juniper berry to the mix. I do not use mustard as a binder as it is not needed. The rub adheres just fine without it.
