Gotta make corn bread for chili. If you need the recipe search here for my thread on two batches of cast iron corn bread.

Yeah it's not red!

It's full of beans and olives and turkey and hominy and cilantro and jalapeños and onion and garlic and a bunch of tasty dried spices. Can you believe I even puréed some of the beans and hominy? Well I did! It's the PNW way!

Oops almost forgot, this wouldn't be turkey chili without the avacado!

ENJOY!!!!

Smoke away!!!

Morning Dirt..... Looked really awesome until the avocados showed up in the picture... I'm trying to "unsee" them now... hard to do..

Guac is very good, but in the fruit stage, poor ol' Dave can't keep it down.... I'll copy the recipe for Bride and skip the green.....

Thanks....

WHAT THA??  In Texas I'm fairly certain that it isn't even LEGAL to call that CHILI!  WHITE beans??

Hi Case.  I gotta agree, call it what you will.  I'd have a couple bowls of that with some cornbread.  Looks MIGHTY tasty!  Thanks for sharing.  Keep Smokin!

Thank you all. It's is tasty and a good way to use left over smoked poultry. If you do what we do you'll have stock from boiling down the neck and carcass. I'll post some more accurate ingredients.

This is for 3 cups stock so adjust as the stock amount increases.

Pre-smoked Meat from 6-8 thighs
2 tablespoons ground Cumin
2 teaspoons ground coriander
1 teaspoon paprika
1 teaspoon chipotle powder
3-6 finely diced fresh jalapenos
6 cloves minced garlic
1 whole onion chopped
2-3 15oz can cannoli beans or northern whites or white beans or red beans or whatever beans you have
1 24 oz can white hominy
1 can olives sliced
1/2 cup chopped fresh cilantro
1-2 Chopped avocados
Salt & pepper to taste

Purée 1 can beans, half the hominy and 1 cup stock.

Add everything to a Dutch oven or stock pot, except the avacado and cilantro.

Simmer for 1-2 hours.

This is a pretty mild base and I add more spice to it when the kids aren't eating it.

Say it's not so !!!   Chili ?

Some Interesting Chili History
bowlch.gif

In 1977 - The Texas legislature officially proclaimed chili the official "state food" of Texas "in recognition of the fact that the only real 'bowl of red' is that prepared by Texans."

It is said that Jesse James (1847-1882), outlaw and desperado of the old American West, once gave up a chance to rob a bank in McKinney, Texas because that is where his favorite chili parlor was located.

"Next to music there is nothing that lifts the spirits and strengthens the soul more than a good bowl of chili."
Harry James (1916-1983) band leader and trumpeter

"Wish I had time for just one more bowl of chili."

"Chili powder makes you crazy"
Anonymous quote - I think a famous chili cook-off winner said this.
The following song has become the anthem at every Terlingua Chili Cook-Off, where no chili with beans recipes are allowed to compete.

If You Know Beans About Chili,
You Know That Chili Has No Beans
by Ken Finlay, singer, songwriter,
and owner of Cheatham Street Warehouse
(a music hall in San Marcos), written in 1976.

You burn some mesquite
And when the coals get hot
You bunk up some meat
And you throw it on a pot.
While some chile pods and garlic
And comino and stuff
Then you add a little salt
Till there's just enough
You can throw in some onions
To make it smell good
You can even add tomatoes
If you feel like you should
But if you know beans about chili
You know that chili has no beans

If you know beans about chili
You know it didn't come from Mexico
Chili was God's gift to Texas
(Or maybe it came from down below)
And chili doesn't go with macaroni
And dammed Yankee's don't go with chili queens;
And if you know beans about chili
You know that chili has no beans

OMG! Pickled owl eyes, Hominy, avocado & Chicken in chili. I like it, but it can't be chili you put beans in it!

LOL..... Sure would be good to curl up next to the fire with a big bowl of it when its playing winter outside.

Looks like a great meal...

Have you ever made chuk? aka jook aka

We used to make a dish in Boy Scouts, usually first night of a camp out that was a spin off of jook. When it was served we'd all be saying " Look kook the cook cooked us jook!"

Pickled owl eyes are no longer allowed out here. That damn spotted owl controversy took care of that, lol!

Come on out to Orygon Kevin and I'll serve you up some seafood chili!

Isn't there some way to ban a member for false advertising around here?!?

Aside from the turkey, beans, olives (and I LOVE black olives!) and the avocado, it still isn't even close to chili!

But it sure does look good, whatever you want to call it!  (aside from the avocado, that is...lol)

And I'll take a couple or four slices of that cornbread, you definitely got that right!
