hi everyone im having a get together with couple football coaches this weekend and im asking for suggestions. im thinking about smoking some brisket, spare ribs and maybe tri tip i have a off set smoker. please keep the suggestions and comments coming thank you
 
Not sure where you're located but looks like much of the US is going to be very cold this weekend , that may (or may not be) an issue???
 
I love tri tip but I can't ever seem to find it on sale (It is $8 per pound around me and that is too much to spend to feed a group of people). Since I tend to be cheap I get my smoking ideas based on what is on sale that week.
 
I'd do one or the other on the beef....like the man said, depending on price. Brisket up here in the PNW is $5 a pound +/- and TT at Costco about $7 a pound. IMO, you need some bird...spatchcocked whole ones or some highly marinated B/S thighs perhaps. Bacon wrapped meatballs, ABT's, spicy wings.....always a hit.....Willie

I would go with ribs, chicken thighs or drums, and maybe some brats. Coleslaw, Dutch's beans, and ABT's for sides. Dang I just made myself hungry again!

LOL... they are coaches.... Do what you do best, they only want the beer and BS.

That being said, were it me, it would be nekkid chicken, spare ribs and sausage.

Don't worry about party favors or finger foods. No women involved, no need for rabbit food.

Meat. potatoes, and beans. Maybe swap the taters for some of the smoker mac & cheese.

Cold beer, smoked or grilled chicken, few slabs of ribs.

Or

You can always cook a butt ahead and reheat for that day. Butts are great reheated, actually better reheated than hot. You can get some of that famous JJ's finishing sauce on them. Totally off the chart!

Whatever it is, just make sure the beer's cold and remember the first liar never stands a chance.... LOL
 
How long does the but take to smoke
Depends upon temp, smoker, foil or not, amount of meat,  I usually figure a 10lb butt to take about 18 to 22 hours. I just assume anything less than a day is just my good fortune. I have had 'em smoke out in 13 hours but than was like one in one hundred. Butts are easy to smoke if you have patience. Rub it, throw it in the smoker, maintain 225 to 275 and try to hoover around 250 as best you can,. When it gets to and IT of 203, give it a toothpick test. If its like warm butter inside, pull it leave it on the counter till cool enough to handle. Pull the meat, put in a ziplock, add maybe a tablespoon maybe two of JJ's finishing sauce and into the reefer for up to a week. Or freeze it till ready.

When ready, warm in an old crockpot (low heat holds moisture and doesn't burn). Small hamburger buns, a bit of BBQ sauce heated, maybe some slaw and beans. Goods well with cold beer. But will lose about 35% weight while cooking. so a 10 lb butt, slow smoked, should yeild about 6 or 7 pounds, and I use as an average about 1/3 of a pound to a person. You're good for 20 people. Did I mention it goes well with beer?
