First time pork butt for pulled pork
Got this at local meat market.

Almost 15#. There was two in the package. I took one out and cut it in half. One 4# the other 3.75#



Put some rub on and wrapped up in fridge over night




After 4 hours at MES set at 275. Probe read 255. IT was 177.


2 hours later IT hit 181 and started to go up more quickly. Reduced MES temp to 250 and waited 3 more hours for IT to hit 205


Wrapped in foil and put in cooler stuffed on top with hand towels. Let rest 2 hours.


Here is the final result from one. Super moist and juicy with good bark? I think.




Btw, smoked with AMZN with hickory pellets for 5 hours.

Two months ago I would have no idea how to even try to make this. I've been reading the forum and have been helped out by c farmer getting started. This first try did turn out good. I want to try different things with the other half 7#. I was unsure about doing the first 7.75# in one piece. I didn't know if I'd have the time to get it done in time. with this I started preheating at 5:45 and didn't pull until 18:00 on a Sunday. Looking forward to the next time....
