Its' supposed to be 20 below  with a stiff wind so screw the fishing and onto some sausage making . I'm going to make some kabonosy and not sure what to make with the other leftover meat

yet. $2.19/lb is the best I can do up here in the willywacks,got one loin and one boneless butt.


here's 4.4 #'s of primo pork and 6.6 #'s of pork trim/fat mixed with cure,salt and sugar for a rest tonight for the kabonosy.Kept separate for 2 different grinds in the am.


here are some scraps for the ermine(weasel) who lives in the garage and keeps the mice out of my deer food

Just curious CM why 10lbs. 10oz.?
T, this is a Marianski recipe and all his small recipes call for 11 pounds.Sorry for the confusion, I was using decimals not ounces.

 I just finished stuffing the sheep casings so will rest the links and smoke in the am.
 
Nice job CM have a whole bundle   of Sheep Casing just need some meat and nicer weather.

20 below!!!!!!!!!!!! You people are nuts...... Packed my bags years ago when I had a choice.....lol   Do miss the ice fishing though. We don't get ice on the lakes here in NC.....Kabanosy looks tasty...........
