Used my Masterbuilt 18.5" kettle, Brined over night then drained paper towel dried, let sit on a rack dry more. Seasoned with my Chicken Season mix.

These I took advantage of todays weather,going to snow Sunday.Tried doing an offset with KBB and Pecan smells great.


kettle smoking to many air leaks on this one.

You can follow what I did, brine over night.

Brine

1/2 C salt non iodized

1/2 C brown sugar

 1 bay leave

a few pepper corns

1/2 to 3/4 gal water

Put the chicken ( pieces,whole ) over night drain,paper towel dry let sit on a rack to dry more.

You can add a rub if you want.

Start your coal get it going good place on the far side away from the birds.

Cook to an IT of 170* F you should be good

Hope this helps post some pics when you do it

I forgot to mention I added a few pieces of Pecan on the top of the coals.
