A belated holiday smorgasbord!

A couple of weeks late - I just realized that I've forgotten to post the smorgasbord!  We had the WSM going for nearly 48 hours straight going into Christmas.  The majority of the below was individually packed for gifts for my 3 sisters (and families) and parents.

All was smoked over a mix of cherry and hickory.

Let's just start with the brisket point and pork butts.  The brisket took 14.5 hours and was pulled at 197 after testing to buttery smooth with a toothpick.  The butts were 17 hours at 192.

Both were coated in a thin layer of mustard and Jeff's rub - rested in the fridge overnight.






On to 4 beer can chickens with a light coating of Jeff's rub.  Each would be turned into pulled chicken.




Below is a double smoked spiral cut ham (this was actually for our own dinner):




One more dish that we kept for dinner - au gratin potatoes:


Bake to the gifts - how about a double batch of SQWIBS Mac & Cheese!



And smoked peach baked beans:


Each picnic basket gift included 1lb brisket, 1.5lbs pulled pork, 1lb pulled chicken, SQWIBs mac & cheese, homemade slaw, smoked peach baked beans, and a jar of homemade q'sauce.

Brian - we have eaten the pulled pork and smoked Mac n cheese. Both were awesome! Especially loved the Mac n cheese! Never had it smoked before. It was great!
 
Brian we ate like ALL of it New Years Eve and over the course of the next few days. It was all so good! Lauren's boyfriend got to enjoy it as well. A lot of time went into that, even though I know you enjoy it, as you should, cuz you're so good at it![emoji]128523[/emoji] One word: YUMMY.
