Great job so far - only 6lbs come on and jump in LOL I did 55lbs last night of stuffing my arm is a little tired not from cranking stuffer,,,,,from lifting cold ones LOL

So checked on the summer sausage and something isn't right. After stuffing last night before bed I got awierd smell from the casings. Now this morning it's worse. Bit sour smelling. I think the casings may have been bad or something for into the box they were stored in. My nose is telling me these need to be pitched. Ughhhh!

The pepperoni turned out GREAT!!! My little sous chef is going to be happy!
 
Case do you think it is going to the trash, or is it salvageable? At least the boy won't be to disappointed.

I'm going to trash it. It smells like mouse droppings! So in pretty sure something must have got into the box. I couldn't smell it until the moisture got into the casings. Something's notnright and I'm not going to risk it. I'll eat the lose of the meat and buy some new chubs.

Damn it DS that sucks about the Summer sausage glad the sticks turned out,,, keep on stuffin I just bought a caddie from butcher packer of the 21MM and when I did mine yesterday I opened them and put them on the stuffer and had a couple of blowouts right off the bat I was mad but they are a little thinner and I just had to be a little more careful stuffing

But I never had a bad batch out of the box that is weird
