No not the band!! The Beef!! Checked my supply of beef sticks, way to low so last night I mixed up 10# of 90/10 burger with a Jalapeno Summer Sausage seasoning kit fro Curley's Sausage Kitchen. Once thoroughly mixed I divided the meat in half and added 1.5 cups of Tones Taco seasoning to one pile. Then into the fridge for an over night rest. Forgot all about pictures till today when they went into the MES.

Set up the Auber for 1.5 hrs.@100, 2 hrs.@120, 2 hrs.@130, 2 hrs@140 then 160 till IT 153


Got the AMPS loaded with Apple and Pecan the set it on fire 1 hr into the process!


Into the smoker @ 1.5 hrs.


Oh yea baby! Door is closed TBS is rollin see ya in about 7 hrs.

well the sticks are done vac packed and put away.


This was the first time I did them using the ramp up the temp over time process because my homemade PID was not programmable like the Auber is. Always before I just set the temp for 165 and let my sticks go to an IT of 155ish. I like the final product both ways. The ramp up process produced a drier stick but not to dry. The coligen casings have a lot crisper bite. Will i do them this way again? Yes only I think next time I will only do 1 hrs at each temp step.

While these were in the smoker I mixed up 10# of Cody's Sticks from Curley's will stuff them in the morning and smoke tomorrow trying the 1 hrs ramp method. I will be sure to post up some q-view of tomorrows activities.

Thanks for all the comments! The Jalapeno and Taco sticks are not to bad, a little on the dry side, but I like the crispy bite of the dry casings.

As promised, here are some pics of Fridays activities!


My very capable assistant {the wife} I crank the stuffer she handles the meat.


10# of Cody's Snack sticks into the MES @ 100 deg. for 1 hrs.!


All apple pellets for this smoke!


Into the smoker! have the Auber programed for 1 hrs. each at 120, 140, then 170 till 153 IT.


About 5.5 hrs later and looking good.


Now that's some good snacking!!!

I could live off of that for a few days. They look very tasty!
