Bama That looks great, I think I am going to try my first PR on New Years if they are still on sale. Rosaures had them this last week for 6.99lb and had to get a 5lb min which would be about right for us.

I just bought a 7 lb. roast for $7.97 lb. and thought I had gotten a good deal.  Haven't had any for three years because of such high prices. -  $3.99????

Hey Bama!

Here is a trick I use for those who like "NO PINK" in their meat.

Just slice theirs a little thinner and put into hot simmering au jus for a couple of minutes, while you carve the next 3 or 4 slices off the roast.. 

It will take the pink out quickly, and still leave them a juicy piece of meat, that is actually, only medium, to mediun well.

Well below their standard, of cooked to oblivion, but they won't know that, because the pink is gone!  LOL

You can also sear it in a pan until pink is gone, but it will be dryer that way.  Same for oven.
Great looking PR! This is a great trick we used many years ago when I worked in a restaurant as a teenager.

Tasty looking roast! On sale here $9.99 per pound, makes a 4 bone roast $80-90!!!! Ughhh.
I'm picking mine up at the butcher in the morning.  It had better be pretty good, since I shelled out $140 for a 12-14 pound roast.  Most of the local beef here tends to be better than what you see in the grocery stores.  Lots of local cattle growers and many of them raise what would qualify as organic if they bothered to have it graded.  I would expect that this one will be quite good.

We buy most of our beef on the hoof, usually yearlings which are separated out, specially fed at the ranch, not at a feed lot (there are 4 or 5 large feed lots within about and hour of us), then sent to one of several area packing houses for processing.  We get to order the cutting done as we like it, not as the grocer wants it.

I know this is a sin to ask, but about how long did the smoking process take start to finish? Also, did and how long did you vary temps?
 
I put it in the smoker around 12:40 and pulled it out at 5:10 best I can remember. I had set my MES to 220 and only opened the door once cause the Amazing smoker went out. When the alarm went off at 133I wrapped it and sit it in the kitchen until the rest of the meal was ready. Probably about 30 minutes. Longer would have been better but I couldn't wait with the smell of that bad boy in the house.

It did not. Had a pan under it to catch every thing too!.

Thanks RIck. God knows I didn't want to see Jim McElwain go to Florida. Know he's not a huge name YET. The Guy knows how to use what he's got for talent. I think ya'll be back sooner rather than later.
 
Thanks for all the comments. It has become my favorite things to do when I can afford it. The wife has mixed feelings on it but she is not right in the head. Eats a turkey and cheese every day on that funny flat bread!!!!!!!!!!! I prefer to stick to the meat and taters! will try and get lots of pictures of the big cook for the game on new years day if I can stay out of the libations.
