Ham Hock Terrine

Had four Pork Hocks with trotters in the freezer, so I decided as it close to Christmas I would make Ham Hock Terrine.


4 ham hocks on the bone with trotters, soaked overnight in cold water then drained
2 bay leaves
4 fresh thyme sprigs
1 tsp coriander seeds
1 tsp black peppercorns
1 large onion, quartered
4 tbsp white wine vinegar

Put Hocks & Trotters in pan, cover with water, add all of the above and bring to the boil, once boiling reduce the heat and simmer for 3 hours.

Hi Danny, just been talking about this years Smoking Weekends!

Had a recepie for Ham Hock Terrine, when I looked at it yesterday it required 6 Days brining! would not get it done form Christmas!

So had to find an alternative. This is not brined, just said wash hocks. will wait and see how it turns out.

Ham Hock Update,

Removed meat from Hocks,


Added chopped Gherkins S&P and Chopped Herds.


Reduced cooking liquid to a third.


Lined a 1Lb loaf tin with double thickness wrap, filled with meat mixture and added some cooking liquor.


Covered top with wrap, place another tin on top, and placed in fridge with weight on top!


Will update with the finished Terrine!
