So right now I have the Char-Broil Big Easy electric Smoker roaster. While I love it because it's electric and I don't have to worry too much about maintaining a constant temperature. I do have have to refill the chip box every 30-40 minutes to maintain constant smoke.

I've been thinking of getting the master built electric smoker and modding it to add the A-maze-n pellet smoker, again only because an electric lets me set the temp and forget about it over night. But lately I've been leaning towards a charcoal wood smoker just so I can get a longer consistent smoke AND have a bigger smoker so I can smoke more meat. Of course my dream smoker would be like what my moms cousin has. He set up he gas grill so it has a dedicated gas line from the house so he never runs out of fuel for his grill. When ever I get a place I can build something like that it will be the first thing I build.

So like the title says what's your smoker, gas, electric, charcoal/wood? Is there a dream one that you would love? If you got pictures post them for me and others to drool over.

Here is what my smoker looks like.
Outside with view of small chip tray
Inside with small cooking area. Works great for two butts, or a large turkey, or a large ham. I haven't tried ribs since the cooking area is so small and round. I think cooking ribs would work better laying flat and not hanging.

I'm about to fire up the offset stick burner. But first I need to go find my steam locomotive engineer's striped cap and overalls.

Nuff said on ribs? You can squeeze a butload of ribs on your smoker like this. Just as good as laying them flat too.

I prefer charcoal. I have had gas before but not electric. I have a Weber Performer which I use to smoke most of my meat actually. When I do something substantial like Butts and Turkeys and stuff I fire up my homemade UDS. I have a WSM but I felt sorry for my dad and loaned it to him, (2 years ago}. I love them all. I also have a little cheif I use for deviled eggs, jerky and fish and the beginning stages of smoked sausage. I would like to have one of each catagory if I was a rich man. Maybe a Lange stick burner and A MES 40 with the glass door. haha....

Mine is a 40" MES Gen#1. I would like to get a MES 30 to have on the deck for smaller cooks when it's just my Dad and I. Maybe a 30" bluetooth when they come out? Also have a Brinkman All-In-One propane but I only use the burner for outdoor frying.

I completely love my WSM.  Great smoker plus year round, inexpensive fuel and wood source (Home Depot or Lowes).

If I lived in a part of the country where cooking wood was readily available at a reasonable price I'd love to have a reverse flow stick burner like a 48" or 60" Lang Deluxe.  But where I live $330-$400 for a cord of cooking wood is insane.  Plus, no hickory wood out here in stick burner quantities.

DAMN! I should start hauling wood. I can get any of that except the Almond for 150.00 delivered and stacked. Or I can go down the road and cut all I want for free

Happy smoken.

And that's the least expensive I've found around here without driving for a couple hours.  I've looked at cooking wood prices online around the country and $145-$150/cord is about what I find everywhere else.

We have an XL BGE. We also have the smallest BGE, believe it is called a Mini. Just ordered a 40" MSE. Ordered a smoking tube a few days ago. Planning on doing the mailbox trick to the MSE. Have an idea how to use the Mailbox Mod with the BGE as well, just need to practice some more with the tig welder before attempting it...or just find someone that can do it for me. Found a place in the panhandle of Idaho that sells food grade 55 gallon drums, some time down the road I want to build a USD. I am new to all this and no doubt am biting off more than I can chew but that seems to be the way I do things.
