Well I did my first pork loin on my Akorn tonight, sorry cook was after dark and I forgot to take any pics. It is the best tasting loin I have ever done. I planned on having this for Christmas dinner, just for something different and I wanted to do a test cook. It was only about a 3 lb loin but I did it the same way I plan on for the dinner. I made a brine with apply juice concentrate, apple cider vinegar, molasses, mustard, kosher salt, pepper corns, sage and some garlic. Let it sit in the brine for 24 hrs then removed it, dried it off and put some McKormacks apple dry rub all over it, followed by a little brown sugar. I let it sit with the rub on it for about 4 hrs and then put it on the grill, with some apple wood chunks, at 325° until it reached 140° IT. Pulled it off and let it sit for 30 minutes.
This is the best tasting and moistest loin I have ever eaten. It came out fantastic and you could cut it with a fork, it was so tender. I am looking forward to the Christmas dinner now. I think my family will be very surprised with the meal this year.
