Ok thanks Oldschool.....I will call the guy that did the "mods" on my offset smoker last summer. I made a batch of Chicken Sausage with Fresh Apples, Parsley and lots of spices. I was thinking "I bet these bad boys would be good smoked!" Still waiting for my new Lem Sausage stuffer....can't wait! You have a blessed Thanksgiving. I'm sure I will bug you before Christmas!

Find a nice person that welds and ask them to fabricate some for you , they are easy and would work great .
I have them in my Smoker (they fold out of the way) , but don't have the equip. to do Sausage...
I hope you get some done , I'm looking forward to seeing some of your Sausages...

DS hardwood dowels? So what would I do with the dowels? Can you post pics of your setup so I can get a visual....thanks DS
SVB what about Hard wood dowels you would pick up at Home Depot or local Ace hardware that is what I use.

Ha-ha CrazyMoon!! I am a sausage making fool up here lol....I am still using my Kitchen Aid for grinding and stuffing. Can't wait to get my LEM sausage stuff...should be here Dec 1st....Have a blessed Thanksgiving.

Hey CrazyMoon - I just finished making a batch of Beef Hot Links and Spicy Italian Sausage. Both are really tasty. Think I need to add a little more fat in my next batch of beef hot links. I didn't get the ratio of fat-to-meat right :o( They seemed to be a little dry but the flavor is awesome. Will make adjustment in my next batch. I'm not going to worry about them being a little dry because my family will devour them anyway lol. Going to cook my beef hotlinks on the grill and slather with bbq sauce..........no one will know! lol

Thanks CM - Yeah I have made several batches of pork sausages. You're right it makes for some juicy sausage.
They look great! Try some straight pork( like grinding up a butt) for some nice, juicy sausage.
