in need of help making breakfast sausage

Hello.
I had a pig buchered and was unable to get sausage made by the butcher do to our food allergys..so i just had it ground fresh and not seasoned....do any of you all have a good breakfast sausage spice mix recipe that is gluten free and soy free. Any information would be awesome. Thank you.
 
I always use Alton Brown's Breakfast Sausage Recipe
  • 2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
  • 1/2 pound fat back, diced into 1/4-inch pieces
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons freshly ground black pepper
  • 2 teaspoons finely chopped fresh sage leaves
  • 2 teaspoons finely chopped fresh thyme leaves
  • 1/2 teaspoon finely chopped fresh rosemary leaves
  • 1 tablespoon light brown sugar
  • 1/2 teaspoon fresh grated nutmeg
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon red pepper flakes

Breakfast sausage is one that can be a simple as S & P and Sage to a whole variety of seasonings, DiggingDogFarm posted a McD's clone that is excellent! I can't recall any recipes that had a Soy Sauce or Gluten component so you should be able to find one that your family will enjoy...JJ
