garlic seal on Shoulder

Im making a shoulder next weekend for some tailgating. I was thinking about running some mustard and garlic through the food processor until the garlic becomes a fine paste then using that to seal the rub in and try to give it another flavor profile. Has anyone tried this?
 
 
Sounds like a great idea to me. I would roast the garlic though.
I was thinking about doing that just to make the garlic more workable. but worries about burning a little.
 
The only thing I would worry about would be burning that garlic and turning it bitter. You might try a trial run on some chicken or something to see if this happens or not.
 
Someone on this forum showed how they took a canning jar and used it in place of their container on the older style blenders. Long story short…. Last weekend I put ¼ cup of EVOO in to a jelly jar along with one of my heads of garlic… Let that puppy run until it was a liquid and put that on my pork butt along with some of Jeff’s Rub… It turned out so good I’m making another butt for tonight.. :yahoo:

I have a grinder I just use for spices also. I was primarily worried about the burning. 
 
You're not going to burn it if you do it right, jeez. Take a whole head of garlic, leave most of the paper skin on pull off the loose stuff, cut it in half horizontally, drizzle with olive oil. Get some foil and wrap the garlic up loosely in it. Roast in a 400F oven for about 30 minutes and check it to see if it's soft enough, if not let it go another 10 minutes, check again and repeat if necessary.

Raw garlic can turn bitter while smoking, roasted garlic will lend a sweetness.
