Nite before last I made Biscuits!


Last night for supper we had Corn Bread


So I am thinking its a good time to practice for any soon to be upcomming holiday events??

I clean and dry a poorly little chicken, boil some eggs too of course.


Chicken goes in the MES30 after a warm up. I waited about and hour and then added the chips (no not chocolate chips!).

We crumble the bread and corn bread together, I threw in the left over onions from the lunch bologna sandwichs. Chopped a stalk of celery, egg whites, a bit of parsley, and a couple of onion tops.


Get out another.......


Grab the spices, the salt and cracked black


Remember this is JUST practice so don't chastize me!


Yes, I have homemade stock in the freezer, so this is quick and easy.

Now below you'll see the giblets, thats the nice way to say chicken guts. If we said chicken guts it wouldn't sound too good. Cook 'em all day long! Make that good gravy. Add those egg yolks to make the gravy really rich.


Here's when the plumbing contractor and the others showed up.

Anyway chicken smoked on one load of apple chips in my MES30. Its a thing of beauty and a tender delicious juicy bird! Seriously, that only one load of chips applied when the chickens IT was 85, it was still gently smoking when I pulled it.


So we had Cornbread dressing


Giblet (chicken guts) Gravy


Thats it no Bear shot, it was inhaled! Oh, had left over slaw and some freshly made fruit salad too!

Hey, its a perfect time to get in that one last test/refresher before its too close to the holidays to do it!

Mine, well I have too easy things I forgot. I used buttered cold bisquits (makes the dressing heavy), AND I put the normal amount of sugar in the corn bread (dressing cornbread needs NO sugar). Had I don't those two things it would have been perfecto! BTW that sweet conbread dressing turned out to be a hit!

If you get a chance, you are running out of time for that last check out run. Besides who says that chicken and dressing is only a holiday food anyway?

Hello my friend.  Can't beat cornbread dressing ( stuffing to you northern folks ).  Got my English wife hooked on that stuff and after a trial run she is POSITIVE the chicken/turkey MUST be smoked for Christmas.  Gotta love a woman who knows good grub when she tastes it.  FINE looking dressing Foam.  Keep Smokin!

I don't know, I used to be one of those folks that thought Thanksgiving and sometimes Christmas were the only times you could have turkey and dressing.  Then I started cooking turkeys more. I really love dressing so then it was learning to make it like Mom. Now I just like it whenever I can get it. The biggest thing is making the cornbread. I sure wish I could duplicate Mom's or Dad's. Just not that lucky or good.

Any excuse is a good one.

BTW I had never really used the thermometer to do tyhe smoke before. I really can't believe the color and smell that came off one charge of chips! Totally awesome.

I lerned to like stuffing in the service too. Never had any before that though. Currently I am looking for a walnut cranberry stuffing recipe. I did it once 20 years ago in some wood ducks and of course thought I could never forget how. LOL

But for tradition it all evolves around what you were brought up with........ its cornbread dressing and giblet gravy!
 
Looks tasty Kevin! I've been wanting cornbread stuffing, but I can't get the rest of the family to sway from the traditional stuffing. May have to make a batch anyways this holiday season.

So what happened to the eggs you boiled? Smoked and turned into the best deviled eggs ever?????? Pickled with sausages?? Smoked egg salad sandwees???

Pretty fine fixin's for a trial run. I'd hit it hard.....gravy looks good....can't tell if there's any lumps what with the guts floating in there.....Good job, Holidaze will be upon us soon....let the games begin.......Willie

Me too... its how Mom made it. I once asked my Mom, after I had left home, for her dressing recipe. She told there wasn't one. I ruined the dressing that year because she was trying to measure what she did and write it down. LOL

Thanks Case just doing a fine tune before its too late.

 EGGS!!! Eggs is everywhere in the south! The boiled yolks go in the giblet gravy to thicken and give it the smooth richness. The whites  for the most part I add to the dressing, a couple are chopped into the gravy.

Back when we had chickens, deviled eggs were a common occurance, but ya know store bought eggs just ain't the same. I saw those pretty duck eggs in C-Man's post and though with the big yold those sucker have they'd make get stuffed eggs!!

Why wait to make it, We already have proved that turkey ain't just for Thanksgiving anymore. Even if its packaged cornbread and can'd bisquits dressing ain't as hard to make as we were once lead to believe and its all left overs! If its not good what have you lost trying?

There are loads of different types of dressings & stuffings, Never had one I didn't like yet!

Actually the skin wasn't too bad Bear. The carcass, which /12 still had its meat on........Happened to fall into the gumbo pot this evening. I'll save you a bowl if ya promise to share that Ms.Bear.

Thank you. Not the best, the butter biscuits really weigh the dressing down, Mom would have been embarassed. And although Mom loved sweet corn bread (Mom loved any corn bread, LOL), she would have been nice about it but it definately wasn't to her standards!

Thats the reason for the tune-up, well and because I could get some dressing! LOL
