Not like I don't have other stuff to do, but damn needed a break. This week the butcher sent me a big package of Pork steaks (actually 2 big packages). I might cook a couple during the week but no way caould i eat all that.

Also she sent me a HUGE Eye of round roast. I had to use two small ones a couple a weeks ago to make Baby Sisters trail jerky for this weekend's trip. So she sent me this huge honking roast. This is a 5lb whole muscle!

So what to do. My chili was running low in the freezer, I always put up a lot of small ziplocs when I make it to heat to use with hot dogs. I needed chili. After checking the pantry, its chili for supper.

First I trim the bones and grind a package of pork steaks (approx. 5 lbs.)


Yes its the old hand crank, I can't seem to find a 3/4" plate for the electric grinder. Doh!  First I ran all the pork, then about 1/2 of the eye of round. No measurements, its Sunday. I am guessing it was about 2 1/2 lbs of beef and about 1 lb of pork.

I guess I am getting smarter in my old age. I can nearly always cook all that chili in my #8 dutch oven, but it gets messy with splatters all over, yet I always do it. Today I pulled out a #12 and the stove and floor is still clean..... Go figure....LOL

So I gave less than 4 pounds of pretty ground pork sitting here, Alwasy now my first thought is Pop's breakfast sausage and it has been awhile!

The above are some new waxed paper casings I am trying..... Oh come on thats funny! I didn't have any blow outs!

Well of course we had to taste it....


That was my Sunday afternoon. I'll put some chili in the freezer for hotdays, and some breakfast sausage for breakfasts, and of course I still have 1/2 that eye of round, will probably do some more jerky for the deer hunters.

Pretty productive afternoon.

Looks good , Kevin . Reminds me , I need to do some Chili and some Pinto beans . . . got some Corn meal today and said  to my self , "Self , we got the makin's , do some munchies..."

I have one of the same Grinders , do you use the electric method . . .

Man, could of used some of that this weekend...was barely 40F and raining....that chili with some fresh bread would have been the best comfort food!

My Sister is not the butcher, I make jerky for my Sister's yearly no men allowed hike up in Georgia, (because my Pop always did when he was able). The butcher is also a female and last year I gave her some of the jerky I made for my sister's trip to try. Since the butcher is a huge hunter, I thought I would make her some as a kind of thank you, she can take it to the camp or the deer stand or feed it to the dogs........LOL Just a way of saying thank you for looking out for me.

The chili is hard to mess up, especially for a Texan like yourself!  When you make something a million times we forget sometimes that most folks don't have those cast iron guts that can take it. LOL.

Thank you, a good chili is like chicken & Dumplins or Soup, or gumbo or Mac & Cheese....... comfort food. Although best served when there is a bite in the air, its good when you turn the A/C up also.

Oh my, I wish! Well we were happy this weekend, it was in the low 90's here, cool front came thru. I fell out laughing at the local weatherman last week he said we should see cooler weather for the football game Saturday night, except the front was stalled out in Canada.........ROFLMAO!

Since the weather's getting chilly, chili's a great way to use up all those end of season chiles. Umm, sorry I couldn't resist.
But seriously that chili looks awesome. And where do you find all these outdoorsy gals? I knew a girl once who did all her own repairs on her jeep, was a plumbing whiz, could out fish, fight, hunt and drink most men and still looked like a million bucks in a clingy low cut dress. I woulda married her except we got in an argument over the proper way to clean a catfish and she used the skinning pliers on me in a way that still makes me wince to think about.

Most of the Bayou Belles down here know how to shoot, cast, and cook. They are usually tackful enough to not out hunt their guy too many times and the guys usually clean dress skin and scrap, and we get the outside pits and open fires. LOL

There are some classy ladies I would hate to have to shoot against doing clays.

Foam it all looks good. I need to start keeping chili in the freezer. I have the problem of it getting ate before I can freeze any. Any way It all looks good and I give 10/1 odds the dog doesn't get anything more than a smell.

My Dad's original chili recipe makes 5 gallons and I always recommend that people double it. And they always laugh. Its like a good Brunswick  stew, it only gets better with age. The 1 Cup ziplocks are not big enough so you are tempted to do more than hot dogs.

I just don't make the big pots anymore, I have cooked chili in 30 gallon cast iron pots before but I don't that too much of that any more. I usually half Pops recipe now and have plenty to freeze some.

BTW I know its not traditional, but I LOVE chili on tamales!! And now that I have flexed my muscles making those wonderful pulled pork tamales...... ZOMG... Its eat till ya have to uncinch the belt! Break out the beer and tomorrow you'll be praying for icecream!

There is a downside to this forum. I have made breakfast strips, salsa, relish, bacon and a bunch of other stuff over the last couple of weeks. Now I see your post and I have to make chili. You will pay sir!

Thank you Dave, ya know I once tried chili in a pressure cooker. I didn't care for it because the meat came out all mushie. But its different strocked for different folks. You may like a tender chili, me its gotta bite back.

I sure wish it was as cool here as you northern boys got it. If it doesn't hit 90 degrees with 100% humidity we all get outside and get nekkid and dance nekkid!
 
Love that you are using those new wax paper casings, and that chili of yours looks really good too, copied the link for later use, but alas still too hot here in on the gulf for more than a bowl full at one setting. 

P.S. We also get out and dance nekkid when both the temps and humidity drops below 100 around here. LOL Thanks for sharing the wealth and spreading some of that savvy around Foam.

LOL..... I really stole that from what I used to say when living in Odessa Texas and Tatum N.M., then I said:

They get more rain in New Orleans in a good shower than they get in a year in West Texas, but you should be there that day it rains! When it rains in West Texas people get so wild and crazzy, they oft times get out in the rain and just dance nekkid! I have danced nekkid in the rain till her neighbors called the cops on us! LOL

Explain this to me, Tatum N.M. is in the middle of the largest forest in the world and average rainfall is 10 to 15 inches. The City of Tatum has a levee built around it and I have seen undoctored photos of people using bass boats to get to the one bar in town! Its a strange world out there!
