I made these while camping the other week on the lid of my 14" dutch oven. They were easy to make and a huge hit with the kids. The egg part could actually be a perfect on the go type of breakfast. The pictures aren't the best, but you'll get the point.
Potatoes:
Heat up a cast iron pan or your dutch oven lid and season with bacon grease.
Dice up a bunch of potatoes with the skin still on.
Crumble as much pre-cooked bacon as you want into the potatoes.
Once the pan is nice and hot, add the potatoes and fry until crispy on the outside.
Eggs In Jail:
Slice a loaf of Italian Bread
Rip a circular hole in the center of each piece and butter both sides of the bread.
Place the bread pieces in the same pan you used to cook the potatoes.
Crack an egg in the hole you cut out in the bread and fry it. The egg will actually cook into the bread and the bread will toast.
Flip the bread over once the egg sets and let the other side toast.
This ended up being a really great, easy, and fun breakfast!
