Decided yesterday to do a spur of the moment smoke. I went to the grocery store across from work during break with the intentions of buying batteries. I bought batteries and 12 Iowa chops weighing about 1 lb per chop. I went home for lunch and put them in a brine of water, salt, brown sugar, garlic and onion powder. I pulled them out, patted dry and dusted with Strawberry's seasoning. I put them on at 4pm when I got off and they finished at about 6:15. Cooked them at 225.
In the brine.
Finished! I let them rest for a half hour in cooler wrapped and foil and dug in. They turned out awesome! I gave the majority away to the farmer that let's me hunt his ground for free. His favorite food happens to be iowa chops...coincidence that I smoked iowa chops? HAH! Said they were some of the best he has ever had! Thanks for looking!

Hey stonesfan,
there is a BBQ place in Holcomb, MO close by where i am from and the name of it is Strawberry's BBQ. They make their own seasoning and use it on every cut of meat they serve. They have one onf the BEST pork steaks i have ever had, you cut it with a plastic fork! You can order the seasoning off of their website and i highly recommend it. Best "store bought" rub i have used.
