Hi , Used my smoker last year and all worked out great. Cleaned the grease out of it  last year and just went to use it for the fisrt time this year. Put some ribs in and started smoking  checked it a few hours later and noticed all the meat was covered wirth soot and was all black.  had to throw it all away.

Now I read some people say don't clean the walls of the smoker which is what I did but couldn't get that black stuff off, I have read some people say this is the seasoning of the smoker and not to clean the walls.  Im confused here can someone tell me why this happenned and how to clean this thing properly so this doesn't happen again.

Hi Thanks for your fast response, yes the fuel is propane it's the duel fuel ProSmoker from Home Depot.  I started it up and the gas ring started up fine, also what is the venturi? It smoked like it's supposed to but like I said all the meat became black with soot. 
 
It is where the gas hose hooks to the smoker. It will have a outer ring that can be turned to adjust the air. That may be the problem. A lot of times a spider will get in past that. When that happens it is not getting enough air. That is what causes the soot.

The venturi is a fresh air intake to mix air with the propane before burning. It's usually behind the knobs on the control panel. Without that mixing, you'll get a sooty yellow flame. You need a blue flame.

Spiders tend to reside in the tubes, blocking the air flow. In some cases you can actually get a risk of fire at the controls.

The best fix I've found is to get some fine brass screen like a plumbing filter, and cut it to fit inside the tube so the incoming air is screened.

Hate to tell you but that duel fuel is JUNK. I also have one. One problem is design. You have more gas going to the burner then venturi (almost non existent) can handle. Only way I can keep the flame BLUE instead ORANGE is keep it turned way down. I complained to the Masterbuilt  and they send me all new parts including Valve, regulator and burner. Same problem. Finally they sent me a new electric smoker. Anyway there are 2 screws holding your valve unscrew them and remove valve/hose assy. Where the brass fitting goes into a burner tube is your venturi. You can also remove burner/venturi (one assy) and clean it. Real low blue flame is the only way this thing will work. Venturi tube has NO AIR adjustment just bunch of small holes in the tube.Valve assembly goes in to far to form a proper air to gas mixture.

Hey Mark, Thanks for your reply, being that we have established this thing is not what its made up to be what smoker do you use now, the new electric smoker they sent you and if so how is that working out?

I have the first generation MES40 and it works great for me.

I can cold smoke




Warm smoke.


Hot smoke.






reverse sear


And on and on. The only draw back I have found is 275° max temp.

Pictures look great, had I had known that the gas smoker was going to cause all this problem I would have gotten the electric one instead. Now I know. Maybe if I complain enough with Masterbuilt maybe they'll send me an electric smoker like they did for you.

One more thing how often do you clean the inside of the smoker and what do you use to clean it.

Mine was out of warranty. Masterbuilt will work with you but you need to be persistent. If you have a Receipt there should be no problem. As I said before they sent me new hose with regulator, new valve and new burner. Same results. The only thing that I can figure out is venturi tube too small or valve orifice (brass part on the end of valve) to long and the hole is too large. If orifices were replaceable  thats where I would start, but they are not. Finally I just told them to send me an electric unit which they did. Now I have 2 units.

By no means am I a pro at this. If I had to do it over again one feature and probably the most important is be able to cold smoke. Looks like all smokers are actually cookers with adjustable temp. http://www.sears.com/masterbuilt-30inch-electrical-digital-smoker/p-07115661000P looks like a good unit.

rbnj , hello . Reading your post , I thought why would anyone say to not clean your Smoker... the oils/fats that drip down need to be removed. My solution to that and keeping my "flavorful seasoning" is to use a wide Putty scraper and when cooled , scrape the nasties into a trash bag . Gets a bit dirty , but no black food and no sick People.

Just sayin' , have fun and . . .
