I currently have 12 lbs of jerky in my MES 40
it has been in there for 8 hours @ 150 and has barely dried out
it seems like the moisture is trapped inside even though the vent is wide open

turned temps up to 170 to see if that helps

any suggestions?
I have this issue with all my low temp smokes
 
Is there no way to fix this issue? I am doing snack sticks tomorrow and have had this problem with those also

Does everyone just leave the door open a crack?

BTW,8hrs for 12 lbs. of meat isn't a lot of time to dry jerky! Especially not knowing how wet it went into the smoker, ie marinated or dry brined.
 
I've spent more then 12 hrs. at times on jerky & I usually do only 5 lbs. at a time. Many factors affect drying times, smoker temp,venting ,outside temp & humidity etc.Which is why I move the meat inside to the dehydrator where I control those factors  Just fight the urge to raise the temps. & cook your jerky! Smoking takes as long as it takes, same thing may take way diff. times on diff. days!
