Beef Short Ribs......

I'm not sure which I like better..... Ox tails, tongue, liver, heart or Short Ribs..... today's choice is the latter.....

They sure look good to me.... Almost done....... 4 hours of Pitmasters Choice pellets from Todd...... 7 hours total cook time..... 2 hours at 120 ish.... crank the temp up to 235 and finish the cook/smoke cycle... dampers wide open so there is lots of air flow.... salt, pepper and Montreal Steak seasoning....

Ooooo , good looing 'Shorts' .  Next time I get an allowance , I'm trying doing those , been a long time , and cheaper than the rack  (which here in Oiho , have little meat on them , and I don't need stock bones , I want meat

Wow Dave I almost missed this, sorry the world has been busy.

I love short ribs, been chewing the bones since a wee little kid. Poor dog would just lay in the corner and cry. LOL

You mentioned Oxtail, its one of my favorite soup meats, add some veggies and demi, a hand full of barley and a whole crowd is pleased. But..... have you smoked an oxtail? I never thought of it. Oooooo........ fresh hocks and oxtail........ OMG!!!

Dave those are some beautiful bones.

Thanks folks.... they were as I remembered.... Greasy and delicious.... There's something about picking up a rib bone and gnawing on it.... Spices were perfect as was the smoke...
Bride ordered ribs and "corn on the cob" for Monday... I'm looking forward to all the special food smoked on Monday..... Hope everyone's cameras are working...
